Growing up we always had potato soup. We never measured anything, we just dumped it all together and cooked it. This recipe is one that I learned from my mom, I just adapted it to fit my modern day taste.
You will need:
And~I usually use raw milk, but I am out.
I peeled and cut up 5 potatoes and about a 1/4-1/2 cup of onion.
I covered them with water and cooked them over medium heat until the potatoes were soft.
I cooked some bacon and broke it up and added it to the potatoes.
Saving a few of the pieces to crumble on top of the finished soup.
When the potatoes were soft, I added milk. I did not measure, I just poured it in until it completely covered the potatoes. I also cubed up about 1/4 of a box of velveeta cheese and put it in the potatoes.
I added 1/3-1/2 cup of instant mashed potato flakes. Yes, I know that it is shameful, but it is a wonderful thickener and it really taste good.
I simmered it on the stove until everything was hot and melted and thick.
Dished it up in a bowl, covering it with MORE cheese and the crumbled bacon.
And it was wonderful!
But He said to them, “I have food to eat of which you do not know.” John 4:32
that looks so good peggy. thats how my mom and i made it, but without the cheese. now im going to do it your way.
The cheese and the instant potato flakes are the changes I made. Not so good for you changes, but good tasting changes. You will love it!
