Chicken and dumplings are one my family’s favorite dishes—except Kory. He has never liked the dumplings. So in an effort to try and please everyone I began to try different approaches.
This is what I came up with and everyone is happy with it. It makes a bunch so there is enough to share.
Boil the chicken until it is completely done, then remove the chicken and keep the broth.
To the broth add 1 can of mushroom soup and/or 1 can of chicken soup. If I have both I use both, but if I don’t I just use whatever I have. Add two chicken bouillon cubes and stir.
Next, add the chicken flavor Rice-a-Roni,
Mix well, bring to a boil and simmer until it is thick. I usually simmer for about 45 minutes to 1 hour.
