Apple Day

ONCE . . . . long ago, I had the most amazing apple tree.  For years I reaped plump, delicious, succulent apples. I spent the late fall season making apple pies, apple crisp and applesauce, filling my freezer full of all things apples. 

But one spring as it began to blossom and grow tiny little apples, it took a terrible turn and died. Since then I have planted apple tree after apple tree, to no avail.  

I have two apple trees planted now, and so far they are looking good, but it will be a couple of more years before I will get any fruit. So Azure Standard will have to fulfill my apple craze for now.

And it begins.

To dehydrate the apples, I slice the apples and sprinkle them with cinnamon, then bake them at 150 degrees for around 6-8 hours, turning them every couple of hours.

This is my first year of canning applesauce. I cooked the apples, covering them with water until they were tender, then added 1/2-3/4 cup sugar and 2 tsp. cinnamon, then I pureed them in my blender.  

I made sure my jars and lids were sterilized before I put the applesauce in them. I hot water bath the jars for 30 mins.

This is also the first time I made apple pie filling in a jar.  I followed the recipe from:

I used arrow root instead of cornstarch.

It took a few Saturdays to finish, and actually, I am not done, but I will keep on keeping on until I am finished and every apple is put up.

The dehydrated apples were a big hit and I have since made a couple more batches. They are Aria’s favorite so I try to have some for her when she visits.

And what can I say about the apple pies?  YUMMY!!

I am always sad when apple season is over. Hopefully there is enough to get me through til next year.

Tarp Shelter

Our Survival Skills class is learning about different types of shelters.          ImageImage

 

So on a Wednesday afternoon we made way to the empty field to make a tarp shelter.

It was totally a group effort and everyone took part in setting up the shelter.

We found two trees that were close together, and using some of the knots they have learned from class, strung and tied a rope between the two trees.

They draped the tarp over the rope and hammered tent stakes into the ground.

After spreading a tablecloth inside the shelter,

we all squeezed inside.

We finished our afternoon off with some mesquite cookies.

For You have been a shelter for me, a strong tower from the enemy, I will abide in Your tabernacle forever; I will trust in the shelter of Your wings.  Ps. 61:3-4

St. Jude Trike-A-Thon

Every year Mrs. Harveson’s pre-school and Kindergarten participate in the St. Jude    Trike-A-Thon.             Image

The bike course is roped off and the children ride their bikes around and around, getting a mark each time they cross the starting line.    

 

They have collected money that will go to the St. Jude Hospital research.

Mrs. Harveson has received an award for being the longest supporting person to participate in this fund raiser.    

This is Aria’s third year to ride in this event.  Image

 

Family members come and watch and celebrate the children and their efforts in supporting such an amazing cause.    Image

The children work very hard as they peddle on and on. 

But . . . . sometimes, they need just a little rest.     Image

And sometimes . . . they have a hard time turning the corner.   Image

 

Sometimes . . . they need to make a pit stop because of technical difficulty.   ImageImage

And sometimes . . . . they are just ready to give up altogether.         ImageImageImageImage

 

But we urge them to keep on going.    Image

And soon the acorns are calling to them,  and they leave their post to collect acorn treasures.

And after the Trike-A-Thon is over, and their lunches are all gobbled up, they load up and go home with great satisfaction, a full belly and with treasures in hand.    Image

The pattern was really easy to follow and I enjoyed knitting it for my sweet granddaughter.        ImageImage

 

And just in time for the cold weather.          ImageImageImage

 

That their hearts may be encouraged, being knit together in love, and attaining to all riches of the full assurance of understanding, to the knowledge of the mystery of God, both of the Father and of Christ, in whom are hidden all the treasures of wisdom and knowledge.  Col. 2:2-3

The prayer request came out mid August, along with a prayer page on face book.  A call to pray for “A Miracle for Jackie Savannah.”

“Jackie was born at 27 weeks & it has been touch & go for her, she needs many prayers & a miracle. We know God is watching over her & her parents.”Image

 

And it starts; the lifting up to God this most precious gift, this “fearfully and wonderfully made” (Ps 139:14 ) miracle from the Father Himself.

And so many join together in the great choir of prayer, and the voices can be heard all around and the voices reach the throne of God, and “He inclines His ear and He hears our voice.”(Ps 116:2)

And everyday, with great anticipation and expectation, the search is on to find an update on this beloved baby girl.

And now, two months later, the miracle that we have all been praying for comes: 

“Update: Jackie moved to the last room they go to before going home, she’s on level 1 O2 weighs 5lbs 7ozs! Thanks so much for all the prayers!”

And how amazing is our Lord? 

“He crowns the years with His goodness and His paths drip with abundance” (Ps 65:11) and we have all been witness to this great, miraculous gift.

As the prayers continue to rise up to our Lord, my gift to baby Jackie is a head covering.  A covering for warmth, a covering of love, but mostly . . . a prayer covering . . . a covering of His precious Words heaped upon her beautiful little head.    ImageImageImage

Hungarian Beautiful

On my trip to Hungary I saw many beautiful places.

Breath taking landscapes and buildings, rich in history and each had it’s own story to tell.

Vintage Pattern

I actually made this dress about four years ago for Aria and now Aniyah is wearing it.

I really love this fabric, it has been one of my favorites! I also purchased the same fabric in pink. It is pretty sheer, so I had to line the dress but I didn’t line the sleeves or yoke.

I sewed matching cording along the bottom of the rounded yoke and at the bottom of the sleeves.       ImageImageImage

 

I finished it off with three pearl buttons that close in the back.       ImageImageImageImage

Mesquite Pancakes

My survival class made an amazing discovery!

The most annoying, gnarly, thorny tree in Texas turns out to be a diamond in the rough.  And it was by sheer accident that we made this incredible discovery. 

While my husband was out on location, surrounded by mesquite trees, his partner began to give him some astounding information about the overlooked ugly duckling. It would seem that the Indians and the pioneers used to make flour out of the mesquite pods and beans. Knowing that I am always on the lookout for such things for my survival class, he relayed the information with one pod in hand.

So I did some research myself, and sure enough it was true.  

And to my great delight not only could you buy mesquite flour (try Amazon.com) but it is super good for you. It is rich in dietary fiber and protein. It also has significant quantities of calcium, magnesium, potassium, iron, zinc  and is naturally gluten-free. It has a nutty flavor with a cinnamon spice flare to it. There is even a cookbook filled with just mesquite recipes.

So . . .  our class made mesquite pancakes.                                                                               While some mixed the pancake batter,

others shook the jar of heavy cream to make butter.

And still others prepared the griddle.

They worked together to mix, cook and serve each other and they made me smile!ImageImageImageImageImageImage

 

And finally it was time to taste the mesquite pancakes . . . . ?           ImageImageImageImageImageImage

It was a winner!ImageImage

 

For the most part everyone liked them, but more than anything, we had great fun together.

And tomorrow we will have mesquite cookies!

Pumpkin Seeds

And let’s not forget the pumpkin seeds.        

After pulling the seeds out and cleaning all the stringy, slimy stuff off, I washed them super good . . .                             Image

then boiled them in salt water for ten minutes.              Image

I dried them off on a paper towel–they do not have to be completely dry, but pretty dry.    Image

I put them on a cookie sheet, rubbed olive oil on them and salted them pretty good.       Image

Then into the oven, 325 for 20 minutes stirring half way through.     Image

The seeds were amazing and I loved them. I finished up the last of them today and can’t wait to make another batch! ImageImage
