Pork Chop Dinner

Over 30 years ago I found this recipe on the back of a pork and bean can and it has become one of our family favorites.

This is what you will need:Image

1 large can of Pork and Beans

1 teas. cinnamon (I usually add just a little more)

1/2 cup brown sugar

1/8-1/4 teas. ground cloves

pork chops

apple slices (optional)

Preheat the oven to 350 degrees.Image

Brown the pork chops on the stove seasoned with your favorite seasoning.Image

While the chops are browning, mix the can of pork and beans and cinnamon together in an oven  proof pan.

In a separate bowl mix the 1/2 cup brown sugar and the ground cloves together. I use 1/4 teaspoon because I like the taste of cloves, but it might be too much for some. Start with the 1/8 teaspoon until you get the desired mix.  ImageImage

When the pork chops are brown, place them over the cinnamon beans, and sprinkle the brown sugar and clove mix over the top.Image

Bake at 350 for 45 min. or until the beans are bubbling and the pork chops are tender.

Optional: slice an apple and place on the pork chops 15 minutes before pulling out of the oven.    Image

Remove from oven.  Image

I usually serve with fried potatoes and salad.  Image

This is what you will need:Image

1 cup whole wheat flour–I grind my own

1 tsp baking powder– I use aluminum free

1/2 tsp baking soda

1 tsp cinnamon

1 tsp ginger

1/2 tsp salt

1/4 tsp ground cloves

1/8 tsp nutmeg

2 tbsp brown sugar–I use coconut sugar

2 tbsp melted butter

1  7-oz container Greek yogurt

1/2 cup milk–I use raw milk

1 egg

Whisk together the flour, baking powder, baking soda, cinnamon, ginger, salt, cloves, nutmeg and brown sugar in a bowl.

Combine the melted butter, the yogurt, milk and the egg in a separate bowl.Image

 

Mix the dry ingredients and the liquid together until all the ingredients are mixed well and the batter is thick.

I used coconut oil for the pan.Image

 

Oil the cookie cutters so the batter will not stick, and pour the pancake batter into them.  Cook until done. Since the batter is thicker that the usual pancake batter, make sure it is cooked all the way through.

When they were done cooking, I drizzled honey over them and sprinkled cinnamon on top.ImageImage

I served the pancakes with fresh raspberries and raspberry tea with honey.

Then I woke my sleepyhead up to eat.

Pizza Dough Recipe:

I half this recipe

6 Cups Warm Water

3 T. yeast (I use SAF)

4 t. salt

13 Cup flour (I grind my own whole white wheat)

Mix yeast and salt in the warm water then add the flour. Mix well, then let it rise for a 1-2 hours, until it has doubled in size. Divide it up and roll it up into pizza crust.

I make it all up and then I bake and freeze the extra pizza crusts, then when I want pizza I just pull the crust out of the freezer, put toppings on it and bake at 400 degrees for about 18 min.

Grinding Grain

I started grinding my own grain a few years ago and don’t know how I ever lived without it.Image

It’s not just the health issues involved, but the difference in the taste and textures are amazing!

It’s not something I do every day, so when I do it, I do enough for Andrea and myself and we keep it in the refrigerator for short term and the freezer for a longer period of time.Image

It is a messy job, but the house is filled with a wonderful aroma that hangs in the air for days.Image

 

I use the same recipe for bread, pizza dough, cinnamon rolls and dinner rolls.

The recipe I use is:

1/3 cup honey (I use raw honey)

1/3 cup oil (I use coconut oil)

2 1/2 cup warm water

1 1/2 TB Saf Instant Yeast (purchased from Suzy)

2 1/2 teas. real salt

6-7 Cup fresh whole wheat flour

1 1/2 TB dough enhancer (purchased from Suzy)

Combine the warm water, yeast, and 2 cups of whole wheat flour in a large mixing bowl. Allow to sponge for 15 minutes. Add the honey, oil, dough enhancer, salt and 4-5 cups of flour. Blend additional flour until the dough begins to clean the side of the mixing bowl. Do not allow the dough to get too stiff or dry.  

Knead the bread by hand 7-10 minutes or until it is very smooth and elastic. 

Form the dough into 2 loaves and place into greased loaf pans.  Allow to rise in a slightly warmed oven or other warm place until doubled in size. (about 30-60 minutes)

Bake loaves for 25-30 minutes in a 350 degree oven. Bread is cooked through when it sounds hollow when tapped on the bottom, and when the top and side are a golden brown color.

Potato Soup Recipe

Growing up we always had potato soup. We never measured anything, we just dumped it all together and cooked it. This recipe is one that I learned from my mom, I just adapted it to fit my modern day taste. 

You will need:

And~I usually use raw milk, but I am out.

I peeled and cut up 5 potatoes and about a 1/4-1/2 cup of onion. ImageImage

 

I covered them with water and cooked them over medium heat until the potatoes were soft.

I cooked some bacon and broke it up and added it to the potatoes. Image

Saving a few of the pieces to crumble on top of the finished soup.Image

 

 

When the potatoes were soft, I added milk. I did not measure, I just poured it in until it completely covered the potatoes.  I also cubed up about 1/4 of a box of velveeta cheese and put it in the potatoes.

I added 1/3-1/2 cup of instant mashed potato flakes. Yes, I know that it is shameful, but it is a wonderful thickener and it really taste good.Image

 

I simmered it on the stove until everything was hot and melted and thick.Image

 

I crumbled the bacon.Image

Dished it up in a bowl, covering it with MORE cheese and the crumbled bacon.Image

 

And it was wonderful!

Chicken Pot Pie

I got the cutest little Wolfgang Puck cast iron cocotte set at our Christmas Eve chinese gift exchange. (thanks Bert)

So in my eagerness to use them I googled and found a recipe for Chicken Pot Pie. I changed it up a little but you can find the recipe here:

I used a whole white wheat flour for the crust. You can find the recipe here:

Our course I started with the chicken, which was purchased at whole foods. Once a year they have a great sale on them and I stock up.

I boiled the whole chicken until it was completely done, then pulled it out and cut it up. I saved the broth.

I cut up 1 cup carrots and 1/2 cup celery

and boiled them for about 15 minutes.

While the vegetables were boiling, I melted 1/3 cup butter and sauteed 1/3 cup onions for a few minutes.

I added 1/3 cup flour and  mixed it into the butter, then added 2/3 cup milk and 1 3/4 cup the chicken broth that I saved and seasoned it with salt and pepper. 

Then I added the cooked drained vegetables and chicken to it. (I also added a can of mixed vegetables because I didn’t have everything I needed, but shhhh, this is a healthy recipe)Image

I filled the cocotte pots up to the top,

and covered them with my pie crusts and brushed an egg wash on them.Image

I cooked them in the oven at 425 degrees for 35 minutes.Image

And, I was VERY happy!! I will definitely make this again. Plus, I will get to use my cocoette set again. 

So it was that quails came up at evening and covered the camp, and in the morning the dew lay all around the camp.  Exodus 16:13

Elder Berry Syrup Recipe

This is the recipe that I use to make Elder Berry Syrup.  I am not sure where I got the recipe but I have had it for a long time and I keep it in the freezer in the same bag as my elderberries.

This is what you will need:

1 Cup fresh or 1/2 cup dried elderberries 

3 cups water (bottled or filtered)

1 cup raw local honey

Before I start making the syrup, I sterilize the bottles and lids.Image

 

Then I gather all the Ingredients  and measure them out.

I pour the water into a pan

and add the elderberries

I bring them to a soft boilImage 

I let it simmer for 45 minutes. I set my timerImage

 

When the time is up I pour the elder berries and juice into a strainer catching the juice into a clean bowl.  I smash the berries to get all the juice out of them.

Then I add the honey and mix wellImage

I then pour the elder berry syrup into my prepared jars.  I usually use a funnel but it seems that someone has mine, and you know who you are (Andrea).Image

It usually makes a little over 2 jars.  I send one home for Aria and keep one here for when she spends the night.

Keep in the refrigerator for 2-3 months.

We give Aria a tablespoon daily to deep the immune system strong.  Plus it taste very sweet and very yummy!

One of her favorites is Pumpkin Pancakes.Image

Here is the recipe that she loves so much.Image

Pumpkin Spice Pancakes:

1 1/4 cups all purpose flour~I use my own ground white wheat flour

2 tbsp. brown sugar~I use coconut sugar

2 tsp. baking powder~I use Rumford’s aluminum-free

1/4 tsp. salt

3/4 tsp. ground cinnamon~I use 1 teas. organic cinnamon

1/4 teas. ground nutmeg

dash of ground ginger

dash of ground cloves

1 cup milk~I use raw milk

1/2 cup pumpkin puree~I use Farmer’s Market organic pumpkin

1 large egg~I use free range

2 tbsp. vegetable oil or melted butter~I use coconut oil

mix dry ingredients together then add the rest.  cook on the stove as you would any pancake.Image

top it off with hot cocoa!

My Favorite Granola

4 cups old-fashioned rolled oats (I use my own flaked oat groats)

1 cup shredded coconut

1/2 cup pecans

                                                      1/2 cup walnuts

                                                    1/2 cup pumpkins seeds

                                              1/2 cup sunflower seeds

                                              1/4 cup balinese sweetened cacao nibs

                                1/2 cup raisins or dried cranberries

                                dash sea salt

mix everything togetherImage

Add:
                                                               
1/2 cup coconut oil

                                                  1/4 cup raw honey

                                                    1/4 cup grade B maple syrup

                                          1 Tablespoon cinnamon

    1/2 teaspoon pure vanilla extract

mix altogether and bake at 300 degrees for 1 hour.  stir every 15 min.Image

I eat this everyday with greek yogurt.  

Yummy!

 

Now the manna was like coriander seed, and its color like the color of bdellium.  The people went about and gathered it, ground it on millstones or beat it in the mortar, cooked it in pans, and made cakes of it; and its taste was like the taste of pastry prepared with oil.             Numbers 11:7-8
